This raspberry surprise is so easy to make,
and your friends and family will not be able to resist it.

VEGAN Raspberry Surprise
1/2 c (1 stick) non-dairy butter (Original Earth Balance – Vegan Buttery Spread)
1 c organic sugar
3 eggs substitutes (Mix together 9 T of chickpea flour with 9 T of water in a small bowl**)
1 c organic all-purpose flour
1/2 t sea salt
1 1/2 t baking powder
1 – 6 oz container of fresh raspberries* (about 1 cup)
organic powdered sugar for dusting (optional)
vegan whipped cream (optional)
vegan non-dairy ice cream (optional)
1 | Preheat oven to 350 degrees. 2 | Butter a 2 quart oval or square baking dish. 3 | In a separate medium bowl, whisk together flour, salt and baking powder. 4 | Using a large bowl, combine the softened butter and sugar with an electric mixer or hand mixer. 5 | Slowly add one third of the chickpea mixture at a time until added to the bowl. 6 | With mixer on low speed, gradually add flour mixture to the large bowl. 7 | Spread the batter in the baking dish. 8 | Scatter the raspberries on top. 9 | Place a cookie sheet below baking dish to catch any dripping. 10 | Bake until top is golden brown, about 45 minutes. 11 | Let cool 20 minutes; dust with powdered sugar, if desired.
To serve: Scoop out onto serving plates, and serve with a dollop of vegan whipped cream or your favorite non-dairy ice cream. Enjoy!
*You may substitute fresh raspberries for another fresh fruit.
**1 egg = 3 T of chickpea flour + 3 T of water
