Vegan Quinoa Cucumber Jalapeno Salad

VEGAN Quinoa Cucumber Jalapeño Salad
Serves  4

INGREDIENTS
2 c  organic quinoa
1 c  organic vegetable stock
1  large Persian cucumber, finely chopped
2  roma tomatoes, finely chopped
2 T  fresh mint, finely chopped
1 T  shallot, finely diced
1  jalapeño**, finely dice (for less heat remove seeds)
3  limes, (2 squeezed and 1 cut into wedges for garnish)
1/2 c  pistachios*, shelled and chopped
3 T  sherry vinegar
3 T  extra virgin olive oil (to taste) DIVIDED
pinch of sea salt
sea salt and fresh ground pepper (to taste)

DIRECTIONS
1 |  Place quinoa, water and a pinch of salt in a small pot. 2 |  Bring to a boil, cover, and reduce to a simmer until tender 15-18 minutes.  3 |  Wash, dry and prepare all produce.  4 |  Combine cucumber, tomatoes, mint, shallots, jalapeño, lime juice and drizzle with 2 T olive oil in a salad bowl. 5 |  Toss cooked quinoa in pot with vinegar and 1 T olive oil using a fork. 6 |  Now add quinoa, pistachios, and mint to salad bowl and toss. 7 |  Add salt and pepper to taste.  8  |  Cover and refrigerate until ready to serve.  9 |  Garnish with lime wedges and mint leaves.

To serve: Eat this salad as a meal or add as a side to your favorite main dish.  Enjoy!

*Nuts in Recipe
**If you prefer not spicy, omit the jalapeño.  Also, if you like it spicy, add another jalapeño.  Making it 2 jalapeños, finely diced.  I prefer spicy!
***Use fresh and organic ingredients whenever possible.
****With every recipe feel free to adjust to your liking.  If you prefer more tomatoes, then add them.
