VEGAN Pancakes with Fresh Blueberry Sauce

These vegan pancakes with fresh blueberry sauce are perfect for breakfast.  They’re:

VEGAN Pancakes with Fresh Blueberry Sauce
Makes  12

PANCAKES
2 c  all-purpose flour
2 T  organic sugar
2 T  baking powder
1/4 t  sea salt
2 c  unsweetened almond milk
2 t  pure vanilla extract
1 c  fresh blueberries (optional)

BLUEBERRY SAUCE
1 c  fresh blueberries, rinsed
1/2 c  organic sugar
1 c  maple syrup

DIRECTIONS
1 |  In a medium pot, add blueberries and mash them using a fork.  2 |  Bring to a slight boil and continue to boil for 2 minutes, then add sugar.  3 |  Stir and bring to a boil for another 2 minutes.  4 |  Remove from heat.  5 |  Using a hand mixer beat for 3 minutes to make sure blended together well.  6 |  Slowly mix in maple syrup until a sauce consistency using a spoon.  7 |  Pour into a mason jar and set aside until cool.  8 |  In a large bowl, whisk together flour, sugar, baking powder, and salt.  9 |  Slowly whisk in the almond milk and vanilla.  10 |  Preheat  your pan to medium, and lightly grease using a non-stick spray.  11 |  When pan is hot, scoop 1/4 cup of pancake batter onto the pan. (If you decide to add fresh blueberries, sprinkle them on here before flipping.)  12 | Flip when bubbles appear on top 2-3 minutes.  13 | Cook another 2 minutes on the other side.  14 |  Stack the pancakes as you cook them on a serving plate.  If you need to keep warm, place into a 200º oven until you are ready to serve. (Make sure the plate is oven safe.)  15 | Repeat the process until you have finished the batter.

To serve: Top a stack of pancakes with vegan butter and drizzle with lots of fresh blueberry sauce.  Enjoy!

*You may substitute fresh raspberries for another fresh fruit.
** If you have any leftovers store in the refrigerator or freeze for later.
