VEGAN Mexican Quinoa
1 c organic white quinoa
1 c filtered water
1 – 8 oz can of organic tomato sauce (or 1 cup)
1 t garlic salt
1 T vegetable oil
1 quarter slice of a red onion
1 | In a medium pot, add quinoa, onion, and oil. 2 | Using medium heat, slightly cook quinoa for 3 minutes to a light golden. 3 | Add water, tomato sauce, and garlic salt, stirring to combine. 4 | Bring to a boil, cover pot with a lid than reduce heat, and simmer for 20 minutes until water has absorbed completely. 5 | Remove from heat, and use a fork to fluff up the quinoa. 6 | Keep covered until ready to serve.
To serve: Always serve warm with your favorite Mexican meal. Enjoy!
*You may substitute white onion for red onion. (I found red to be more flavorful.)
** If you have any leftovers store in the refrigerator or freeze for later.
***Use fresh and organic ingredients whenever possible.
