These crunchy blueberry oatmeal cookies are not only healthy, but yummy
and your friends and family will not be able to resist them.

VEGAN Blueberry Oatmeal Cookies
1 c almond flour
3/4 c rolled oats
1/4 c dried blueberries
3/4 t baking powder
1/4 t sea salt
1/3 c organic brown sugar (packed)
1/4 c aquafaba*, cold (beat until fluffy, using a hand mixer for 3 minutes in a small bowl)
2 T peanut butter
3 T coconut oil, melted
1 t pure vanilla extract
1 | Preheat oven to 350 degrees. 2 | In a large bowl, stir together flour, oats, blueberries, baking powder, salt and sugar. 3 | Add peanut butter, oil and vanilla to the aquafaba, whisk until combined. 4 | Now mix in the dry ingredients. 5 | Cover and place in the refrigerator for 30 minutes. 6 | Scoop 1 tablespoon of chilled batter onto the parchment lined baking sheet leaving a 1-inch space between each cookie, repeat until batter is finished. 7 | Using a spoon press lightly on top of each cookie to form a disc. 8 | Bake for 10 – 12 minutes until golden. 9 | Remove from oven and let cool.
To serve: Try an ice cold glass of homemade coconut milk with a plate of cookies. Enjoy!
*Aquafaba is the juice from a can of organic garbanzo beans, perfect substitute for eggs. Best, if cold.
