VEGAN Beet Hummus
Makes 2 cups
1 beet, cubed
1 – 15 oz. can of garbanzo beans, rinsed and drained
4 T tahini
2 1/4 c filtered water DIVIDED
2 garlic clove, minced
2 T fresh lemon juice (about 1 lemon)
2 T olive oil
1/4 t sea salt
1 | In a small saucepan, add 2 cups of filtered water DIVIDED with a pinch of salt and cubed beet. 2 | Bring to a boil then reduce to a simmer for 45 minutes or until beets are soft. 3 | Drain water from saucepan and let beets cool for a few minutes. 4 | Add all ingredients including the beets, and remaining 1/4 cup of filtered water DIVIDED into a Vitamix or food processor. 5 | Blend until smooth and creamy. 6 | Add more filtered water as needed to help achieve the right consistency one tablespoons at a time. 7 | Keep refrigerated for up to 5 days.
To serve: This is great served with pita chips, crackers or some fresh veggies. Enjoy!
